Mango Upside Down Cake. Whisk buttermilk mixture into flour mixture until smooth and combined. Arrange mango slices over the butter and sugar coating.
Fold toasted coconut into cake batter. Spoon batter over the sliced mango, and spread evenly to the edges. Fan out mango slices in a circle to cover the bottom and set aside.
Sift dry ingredients and add alternately with milk.
You can either do this next step in the oven, or on a stove top.
Combine the mangoes and rum in a bowl and mix well. Set the tin aside and quickly make your cake mix, Combine all the wet ingredients together in measuring jug. Whisk together the flour, baking powder and salt in a medium bowl and set aside.
